U.S. poultry production is currently a 21.2 billion industry, slaughtering
8.7 billion birds a year. Karen Davis, PhD will offer an inside
look into this business—the history of its growth, its impact
on the environment, its responsibility for human illness, its treatment
of workers, and its abuse of animals. Davis is President-Director
of United Poultry Concerns, a nonprofit organization dedicated to
the compassionate and respectful treatment of domestic fowl. She
is the author of Prisoned Chickens, Poisoned Eggs: An Inside
Look at the Modern Poultry Industry and More Than a Meal: The Turkey
in History, Myth, Ritual, and Reality.
